Pumpkin Bars

Pumpkin Bars are the perfect fall treat! These bars have moist, pumpkin cake on the bottom and a creamy, sweet frosting on top. I look forward to eating these every fall. I received this recipe from a friend about 20 years ago. He brought these bars into work and once I tasted them, I was hooked. I had to have the recipe!

The original recipe makes two large pans of pumpkin bars. If two pans is way too much, I also reduced the ingredient amounts to make one large pan instead. These Pumpkin Bars are perfect for potlucks, parties, family gatherings or really anytime this fall. Once you try them, you'll be hooked, too!

Ingredients
For two pans of Pumpkin Bars
1 1/2 cups cooking oil 
3 cups granulated sugar
6 eggs
29 oz. solid pack pumpkin (3 cups) not pie filling!
3 cups all-purpose flour
3 teaspoons baking soda
3 teaspoons cinnamon
3/4 teaspoon salt
OR for one pan of Pumpkin Bars
3/4 cup cooking oil
1 1/2 cups granulated sugar
3 eggs
1 1/2 cups solid pack pumpkin
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1/4 heaping teaspoon salt
Directions
1. Mix together oil and sugar.
2. Add eggs and beat well.
3. Add in pumpkin and mix well.
4. Add in dry ingredients and mix until batter comes together. Scrape down sides as necessary.
5. Pour batter into greased, large (approx. 15x12x1) jelly roll pan(s). Bake at 350 degrees F. 20-25 minutes. Frost when cool.

Cream Cheese Frosting
To frost two pans of Pumpkin Bars
8 oz. cream cheese, softened
1/2 cup (1 stick) butter, softened
2 teaspoons vanilla
4 cups powdered sugar
To frost one pan of Pumpkin Bars
4 oz. cream cheese, softened
1/4 cup (1/2 stick) butter, softened
1 teaspoon vanilla
2 cups powdered sugar
Directions
1. Blend together cream cheese, butter and vanilla.
2. Add in powdered sugar and blend until smooth. Scraping bowl as necessary.

If you love pumpkin, I can't see any reason why you won't also love these Pumpkin Bars! I've been making these bars for the past 20 years and I crave them every fall. We like to eat these with a glass of milk or a mug of hot cocoa. Happy fall, ya'll!
