Cheeseburger Soup

Cheeseburger Soup is a rich, hearty soup that will stick to your ribs. Perfect for the chilly months coming up. I've made this recipe many times. My oldest two really like this soup and the youngest two think it's OK. It's a winner in my book, because everyone will eat it.

Ingredients
1/2 lb. ground beef
3/4 cup chopped onion
3/4 cup shredded carrots
3/4 cup diced celery
1 teaspoon dried basil
1 teaspoon dried parsley flakes
4 Tablespoons butter, divided
3 cups chicken broth (2--15 oz. cans)
4 cups diced peeled potatoes (about 2 lbs.)
1/4 cup all-purpose flour
2 cups (8 oz.) process cheese like Velveeta, cubed
1 1/2 cups milk
3/4 teaspoon salt
1/2 teaspoon ground black pepper
1/4 cup sour cream
Directions
1. Brown ground beef in a 4 qt. pot. Drain beef, pour out into a bowl and set aside.
2. Add 1 Tablespoon of butter to the pot along with the onion, carrots, celery, basil and parsley flakes. Cook and stir until softened, about 10 minutes.
3. Add chicken broth, potatoes and ground beef back to the pot. Bring to a boil. Cover and reduce heat. Simmer until potatoes are tender, about 10 minutes.
4. Meanwhile, in a small skillet melt remaining butter. Add flour and cook and stir about 3-5 minutes until bubbly. Add mixture to the pot and bring to a boil. Cook and stir for 2 minutes.
5. Reduce heat to low. Stir in cheese, milk, salt and pepper. Cook and stir until cheese melts.
6. Remove from heat and stir in sour cream.
Makes about 8 servings ( 2 1/4 quarts)

The Results... 
Cheesy, creamy, rich and filling. We eat Cheeseburger Soup with a salad and rolls to make it a complete meal. It reheats well for leftovers the next day.
