Candied Pecans

This recipe for candied pecans is the best that I've made. The pecans turn out crunchy, sweet, salty with a hint of vanilla and cinnamon.You can turn these tasty nuts into some great little gifts for the holidays!
Breakfast with Santa Concert
We are in total Christmas mode here. I can't believe Christmas eve is one week away! We've been enjoying the holiday activities this month, especially the holiday school concerts this year. We've already been to three and we still have one this Friday and next Tuesday.

Our son is in the high school jazz band and symphonic band and our daughter is in the 6th grade band, chorus and honors chorus. Tuesday night was the middle school band concert and Wednesday night was the High School Bands concert. It's interesting to see what a difference a few years make!

I still feel like there is so much still to do, but I'm not letting myself get stressed out. It all works out somehow every year and I want to enjoy all the holiday moments I can with my family.

Ingredients
1lb. pecan halves
1 egg white
1/2 Tablespoon water
1 teaspoon vanilla
1 cup granulated sugar
1 teaspoon cinnamon
1 teaspoon salt
Directions
1. Preheat oven to 250 degrees F.
2. Stir together sugar, cinnamon and salt in a small bowl. Set aside.
3. Whisk egg whites, water and vanilla together in a large bowl until frothy.
4. Add pecan halves to frothy mixture and stir to coat evenly.
5. Add the sugar mixture and stir again until evenly coated.
6. Pour out onto a baking sheet and bake for 1 hour, stirring every 15 minutes.

Put the wet ingredients into a large bowl and whisk until......
frothy. Then, add the pecans in and coat well with the wet mixture.
Next, is the sugar mixture. Pour it onto the nuts.
Stir again to coat evenly.
Spread the nuts onto a baking sheet. I lined it with parchment paper to make clean-up a little easier. Bake in a 250 degree F. oven for 1 hour, stirring every 15 minutes.
 All done! These candied pecans are sooooo good!
The Results...
Crunchy, sweet, salty with a hint of vanilla and cinnamon. We enjoyed snacking on these as they are and also tossing some into salads. You could also top off an ice cream sundae or sprinkle on a cake or pie. This recipe is a keeper! I've tried different recipes for candied pecans, but this is my favorite so far. Enjoy!
