Chinese Slow Cooker Chicken


Here's a family favorite slow cooker meal! Chinese Slow Cooker Chicken is super easy to put together in the slow cooker. I only make this recipe with low sodium soy sauce because I think it is too salty when made with regular soy sauce. This recipe is great for busy days. Get it in the slow cooker in the  morning, cook on low and its ready in evening. Cook some Minute rice, steam some broccoli for 8-10 minutes and dinner is ready in no time!

Ingredients 
2.5 to 3 lbs. boneless, skinless chicken thighs or breasts
1 cup low sodium soy sauce
1/2 cup brown sugar
4 Tablespoons lemon juice
2 Tablespoons canola oil
1/4 teaspoon garlic powder
Cooked Rice, enough for about 6-8 servings
2-3 Tablespoons corn starch (optional-for thickening the sauce)
Directions
1. Add chicken into slow cooker. Whisk together rest of ingredients.
2. Pour sauce over chicken in slow cooker.
3. Cover and cook on high for about 4 hours or low 7-8 hours (depending on your slow cooker). Cook until chicken is very tender.
4. If desired, pour remaining sauce from slow cooker into a sauce pot on stove. Whisk in about 2-3 Tablespoons cornstarch and bring to a boil. Simmer until the sauce thickens.
5. Pour sauce over chicken and serve with rice and veggies.
